On this past weekend’s Minding Your Business on News 12+, Elijah's Promise Executive Director Michelle Wilson joined Bob Considine to discuss how the innovative soup kitchen uses food programs to break the cycle of poverty, alleviate hunger, and change lives in many communities in Central New Jersey.
“We are an organization that would actually like to put ourselves out of business, but unfortunately food insecurity keeps rising,” Wilson said. “A lot of people think that the only people served by community kitchens like ours are people maybe who are homeless or have mental health issues and that is a small segment, but the overall majority of those we serve are the working poor.
“We’ve seen over the last several years that the cost of housing has gone up, the cost of health expenses has gone up, and food inflation has really skyrocketed and so you take all those pieces together and that’s the working poor that we’re serving… it’s the employed that we’re seeing and those numbers continue to grow.”
